OCC Chefs Offer Three Tasty Grilling Recipes for Labor Day Weekend Gatherings

The Labor Day Weekend is a great time to have an end-of-summer party and fire up the grill for some barbecue favorites. To help with your grilling menu, the chefs at the Oakland Community College’s Culinary Studies Institute are providing three grilling recipes to try:

BBQ Steak, Apple Cole Slaw, Salsa Verde  

Steak

Oakland Community College Chef Instructor Julie Selonke has put together a perfect Grilled New York Strip Steak meal complete with Apple Cole Slaw and Salsa Verde.  Chef Selonke advised to do as much as you can ahead of time when entertaining so you can relax when the guests arrive.  

“The beautiful thing about the Salsa Verde and Apple Coleslaw recipes is that they taste better if you make them in advance,” she said. “Wash all your ingredients, and it will take about an hour to prepare unless you are fast with a knife. You may use a mandolin if you wish to make quick work of it but watch your fingers! “  

Another good tip from Chef Selonke is to invest in a good digital thermometer – they are not terribly expensive and can be found in large chain grocers.   

“About an hour before I cook the steaks, I’ll pull them out of the refrigerator to come up to room temperature and season them generously with salt and freshly cracked pepper. Preheat your charcoal or gas grill, brush it aggressively with a wire brush, oil, and then place steaks on the grill and cook them until they reach an internal temperature of 132 degrees or medium rare.  You must provide time for the meat to rest and reabsorb the juices, minimally five minutes but 10 is better,” she said. 

Finally, spoon the salsa Verde over beautifully sliced beef for a striking presentation.
